Delicious winter beef and olive stew with pasta, corn, and beans. Top with sour cream and crispy tortilla chips. Enjoy this cozy comfort food!
Ingredients:
  • 1 onion, chopped
  • 1 (11 ounce) can whole kernel corn, with liquid
  • 1 (2.25 ounce) can sliced black olives, with liquid
  • 1 (14.5 ounce) can tomatoes with juice, chopped
  • 1 (15 ounce) can chili beans, drained
  • 0.5 cup chopped green onions
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (16 ounce) package uncooked egg noodles
  • 0.5 cup sour cream, for topping
Instructions:
  • Cook the ground beef, onion, and garlic in a large skillet over medium heat until the beef is evenly browned. Remember to drain the mixture before continuing.
  • Combine the corn, olives, tomatoes, chili beans, and green onions in the skillet. Sprinkle with taco seasoning and salt. Cover and cook for 15 minutes.
  • Combine the egg noodles with the skillet mixture, cover, and cook for 12 minutes until the noodles are tender. Serve each portion with a dollop of sour cream on top.
