Fall Hodge Podge stew features freshly harvested veggies from Nova Scotia gardens.
Ingredients:
  • 1 cup fresh green beans, trimmed and snapped
  • 1 cup fresh wax beans, trimmed and snapped
  • 1 cup diced carrot
  • 1 cup diced turnip
  • 4 cups water, or as needed to cover
  • 0.25 teaspoon salt, or to taste
  • 2 cups cubed new potatoes
  • 0.5 cup heavy cream
  • 6 tablespoons butter
  • 1 tablespoon all-purpose flour
Instructions:
  • In a stockpot, mix green beans, wax beans, carrots, and turnip. Pour enough water to cover the vegetables. Add salt, bring to a boil, then simmer for 30 minutes.
  • Simmer potatoes until fork-tender, approximately 30 minutes. Then, swirl in cream and butter.
  • In a small bowl, vigorously whisk together 1/2 cup water and flour until smooth. Stir the mixture into the soup and simmer until it thickens, which should take about 3 to 5 minutes.
