Savory vegetarian nut loaf packed with walnuts, pecans, mushrooms, and wild rice, bursting with flavor and loved by vegetarians.
Ingredients:
  • 1.5 cups walnuts
  • 0.5 cup pecans
  • 1 small sweet yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (6 ounce) package baby bella mushrooms, chopped
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 12 ounces shredded Swiss cheese
  • 1.5 cups cooked wild rice
  • 1 cup cottage cheese
  • 4 large eggs, lightly beaten
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
Instructions:
  • Preheat the oven to 375°F (190°C) and grease a 9x5-inch loaf pan with butter.
  • Place walnuts and pecans in a zip-top bag, seal it tightly, then crush the nuts with a rolling pin until desired consistency is reached.
  • In a skillet, warm olive oil over medium heat. Sauté onion and garlic until onion turns translucent, for about 3 minutes. Add mushrooms, marjoram, sage, and thyme; continue cooking until mushrooms are golden, about 5 minutes. Place the flavorful mushroom mixture into a large bowl.
  • Mix crushed walnuts, Swiss cheese, wild rice, cottage cheese, eggs, parsley, salt, and pepper into the mushroom mixture until well combined. Transfer the mixture into the loaf pan.
  • Bake the loaf in the preheated oven until golden brown, which should take about 1 hour. Allow the loaf to cool in the pan for around 20 minutes before flipping the pan over to release the loaf.
