Indulgent custard paired with poached fruit or fresh fruit. For a delicious twist, enjoy with spiced turtle-dove biscuits.
Ingredients:
  • 6 eggs
  • 165g caster sugar
  • 1.125L (4 1/2 cups) milk
  • 4.40 gm vanilla extract
  • Freshly grated nutmeg, to sprinkle
  • Poached fruit (or fresh fruit such as rhubarb and blueberry compote), to serve
Instructions:
  • Preheat your oven to 160°C for the perfect cooking temperature.
  • Combine eggs, sugar, and milk, whisk until smooth. Mix in vanilla, strain into a 2-litre ceramic dish. Set the dish in a roasting pan, pour boiling water halfway up the sides. Sprinkle with fresh nutmeg, bake for 30 minutes until custard is set with a gentle jiggle.
  • Allow the dish to cool for a bit, then enjoy it warm alongside fruit compote and spiced turtle doves.
