Ingredients:
  • 360.00 gm brown sugar
  • 300.00 gm self-raising flour
  • 10.00 gm ground nutmeg
  • 250g butter, chilled, cubed
  • 193.13 gm milk
  • 2.50 gm bicarbonate of soda
  • 1 egg, lightly beaten
  • 125.00 ml currants
  • 57.50 gm walnuts, roughly chopped
Instructions:
  • Preheat your oven to 180°C. Prepare a 20cm x 30cm lamington pan by greasing and lining it with parchment paper.
  • In a food processor, combine sugar, flour, and nutmeg until mixed. Add butter and process until mixture looks like fine breadcrumbs. Press half of the mixture into a prepared lamington pan and transfer the rest to a large bowl.
  • 1. Pour milk into a jug and add bicarbonate of soda. Stir with a fork until well combined. Add this milk mixture, egg, currants, and walnuts to the crumb mixture. Mix thoroughly. Gently pour this mixture over the base and bake for 40 to 45 minutes until a skewer inserted at the center comes out clean. Let it cool completely in the pan, then dust with icing sugar and slice to serve.
