Impress your guests with these delectable walnut and pistachio filled cookie cups.
Ingredients:
  • 1 egg
  • 1/2 cup butter or margarine, softened
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/3 cup honey
  • 2 tablespoons butter or margarine, melted
  • 1/4 teaspoon salt
  • 1/3 cup chopped walnuts
  • 1/3 cup pistachio nuts, chopped
Instructions:
  • In a medium bowl, mix 1/2 cup of butter and cream cheese with an electric mixer on medium speed for 2 minutes until well combined. Gradually add flour on low speed until a soft dough forms. Cover and refrigerate for 1 hour before proceeding.
  • Preheat oven to 350°F. Roll the dough into 24 (1-inch) balls and press them into the bottoms and up the sides of 24 ungreased mini muffin cups. In a small bowl, whisk together brown sugar, honey, melted butter, salt, and egg. Add walnuts and pistachios, then evenly spoon the filling into the dough-lined cups, filling three-fourths full.
  • Bake for 22-24 minutes or until the filling is set and the edges of the cups are golden brown. Run a knife around the edges of the cookies right away to loosen them. Allow them to cool for 10 minutes before transferring to cooling racks.
