Nutty Raspberry Chocolate Muffins

Colorful and healthy muffins filled with raspberries, banana, almond meal, and dark chocolate chips, perfect for the whole family to enjoy.
Ingredients:
  • 1 cup almond meal
  • 0.5 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.75 cup white sugar
  • 0.5 cup butter, room temperature
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 0.5 cup milk
  • 0.5 cup plain yogurt
  • 0.5 ripe banana, mashed
  • 1 cup fresh raspberries, cut into small pieces
  • 1 cup dark chocolate chips
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and prepare a muffin tin either by greasing it or lining it with paper liners.
  • Combine almond meal, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt in a mixing bowl.
  • In a separate bowl, cream together butter and sugar until light and fluffy. Gradually add eggs, one at a time, ensuring each is fully incorporated before adding the next. Mix in vanilla to the butter mixture.
  • In a separate bowl, combine milk and yogurt. Gradually add the butter mixture and milk mixture alternately to the flour mixture until just mixed. Gently stir in the mashed banana, and fold in the raspberries and chocolate chips. Fill muffin cups 3/4 full with the batter.
  • Bake in the center of the oven at the set temperature until a toothpick inserted in the center of the muffins comes out clean, for 18 to 25 minutes.
