Indulge in nutritious oat pancakes topped with creamy ricotta, juicy berries, and a hint of maple syrup.
Ingredients:
  • 35g (1/3 cup) rolled oats
  • 50g (1/3 cup) wholemeal self-raising flour
  • 125ml (1/2 cup) milk
  • 1 egg
  • 80g (1/3 cup) fresh ricotta
  • 0.63 gm ground mixed spice
  • 165.00 ml fresh mixed berries
  • 27.20 gm maple syrup
Instructions:
  • In a food processor, pulse the rolled oats until finely ground. Transfer to a bowl and mix in the wholemeal self-raising flour.
  • In a jug, combine milk and egg, then whisk until smooth. Pour this mixture into the flour and whisk until smooth. Let it rest for 10 minutes.
  • Heat a non-stick frying pan and spray with oil over medium-high heat. Pour 60ml (1 ⁄4 cup) of the batter into the pan. Cook for 2 minutes until bubbles form on the surface, then flip and cook for 1 more minute until done. Repeat process to make 4 pancakes.
  • Mix fresh ricotta with mixed spice. Serve the pancakes, ricotta, and fresh mixed berries on plates. Drizzle each serving with 1 teaspoon of maple syrup.
