Chewy and moist oatmeal cookies with crushed pineapple.
Ingredients:
  • 6 tablespoons margarine
  • 1 cup packed brown sugar
  • 0.5 cup white sugar
  • 1 egg
  • 0.75 cup all-purpose flour
  • 3.5 cups rolled oats
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 cup raisins
  • 0.75 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), and generously grease your cookie sheets.
  • Combine margarine, brown sugar, and white sugar in a bowl, cream until smooth. Mix in the egg and vanilla. Fold in flour, baking soda, and cinnamon until just combined. Stir in oats, raisins, pineapple, and walnuts.
  • Spoon dough onto a lined cookie sheet, keeping cookies 2 inches apart. Bake in a preheated oven for 10-12 minutes. Let cool briefly on the sheet before transferring to wire racks to cool completely.
