Delicious cookies filled with hearty oats and sweet butterscotch chips.
Ingredients:
  • 1.25 cups whole-wheat flour
  • 1 teaspoon salt
  • 0.5 teaspoon baking soda
  • 0.75 cup butter, softened
  • 1 cup packed light brown sugar
  • 0.75 cup ground flax seed
  • 0.5 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups oats
  • 2 (6 ounce) packages butterscotch chips
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect bake.
  • Combine the flour, salt, and baking soda in a bowl.
  • Cream the butter, brown sugar, flax seed, and white sugar together with an electric mixer in a large bowl until smooth. Mix in one egg until fully incorporated. Then add the remaining egg and vanilla extract. Gradually mix in the flour mixture until just combined. Gently fold in oats and butterscotch chips until evenly distributed; scoop onto baking sheets using an ice cream scoop or a heaping spoonful.
  • Bake in a hot oven until golden, about 12 to 14 minutes. Let cool on baking sheets for 3 minutes, then transfer to a rack to cool completely.
