Butterscotch cinnamon cookies packed with chips and oats, chewy and ready in just 10 minutes.
Ingredients:
  • 0.75 cup butter, softened
  • 0.75 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 3 cups rolled oats
  • 1.6666666269302 cups butterscotch chips
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Cream together butter, white sugar, and brown sugar until light and fluffy using an electric mixer in a large bowl.
  • Incorporate eggs individually, ensuring thorough beating between each addition, then mix in vanilla.
  • Combine the flour, baking soda, cinnamon, and salt in a separate bowl. Slowly incorporate the flour mixture into the butter mixture until well combined.
  • Combine oats and butterscotch chips until mixed evenly.
  • Spoon dough onto a non-greased baking sheet. Bake in the preheated oven until edges turn golden, about 8-10 minutes.
