Delicious homemade cookies reminiscent of Girl Scout oatmeal peanut butter cookies.
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.5 cup butter, softened
  • 0.5 cup peanut butter
  • 0.5 cup white sugar
  • 0.5 cup packed light brown sugar
  • 1 cup quick cooking oats
  • 3 tablespoons butter, softened
  • 1 cup confectioners' sugar
  • 0.5 cup smooth peanut butter
  • 2.5 tablespoons heavy whipping cream
Instructions:
  • Combine 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla in a large bowl, then mix until creamy. Add egg and beat until well combined.
  • In a separate bowl, mix together flour, baking soda, baking powder, and salt. Fold these dry ingredients into the creamed mixture, followed by the oatmeal. Mix until just combined.
  • Spoon teaspoonfuls of dough onto a greased baking sheet, gently flatten each mound with a fork to create 1/4 inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes or until cookies are lightly browned.
  • Prepare the filling by mixing together 3 tablespoons of butter, confectioners' sugar, 1/2 cup smooth peanut butter, and cream until creamy. Spread the filling onto half of the cooled cookies and sandwich them together with the remaining halves.
