Irresistible peanut butter oatmeal cookies - rich with peanut butter flavor and wholesome oats for a deliciously modern take on a timeless favorite.
Ingredients:
  • 1 cup peanut butter
  • 1 cup packed brown sugar
  • 0.5 cup shortening
  • 0.5 cup margarine, softened
  • 2 large eggs
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup quick-cooking oats
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large bowl, use an electric mixer on medium speed to blend peanut butter, brown sugar, white sugar, shortening, and margarine until smooth and creamy. Add eggs one at a time, blending well after each addition.
  • In a separate bowl, blend flour, baking soda, and salt. Add this mixture to the creamy batter and stir until combined. Gently fold in oats until just mixed.
  • Place spoonfuls of dough onto your baking sheets without greasing them.
  • Bake cookies in the preheated oven for 10 to 15 minutes until lightly browned. Ensure not to overbake. Cool and store in an airtight container.
