Oatmeal Pecan Snack Cookies

Delicious oat and pecan cookies, perfect for snacking or dessert.
Ingredients:
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1 3/4 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened
  • 6 oz reduced-fat cream cheese, softened
  • 1 1/2 cups packed dark brown sugar
  • 1/2 cup fat-free egg product
  • 3 cups old-fashioned oats
  • 3/4 cup dried cherries
  • 1/2 cup chopped pecans
Instructions:
  • Preheat oven to 350°F and generously coat cookie sheets with cooking spray.
  • In a medium bowl, combine flour, pumpkin pie spice, baking soda, and salt; set aside. In a large bowl, cream together butter, cream cheese, and brown sugar until fluffy using an electric mixer. Mix in egg and vanilla. Gradually add the flour mixture on low speed until just blended. Fold in oats and cherries.
  • Drop dough by rounded tablespoonfuls onto cookie sheets, spacing them 2 inches apart. Slightly flatten the dough and sprinkle 1/2 teaspoon of chopped pecans onto each cookie, gently pressing them into the dough.
  • Bake for 13 to 14 minutes or until a toothpick inserted in the center comes out clean. Transfer to cooling racks.
