Oatmeal Coffee Cake with Pecan Streusel

Oat coffee cake with sweet pecan streusel, ideal for brunch or a snack with coffee. Hard to resist just one piece.
Ingredients:
  • 0.5 cup brown sugar
  • 0.5 cup chopped pecans
  • 3 tablespoons unsalted butter, at room temperature
  • 2 tablespoons all-purpose flour
  • 1.5 cups boiling water
  • 1 cup rolled oats (not instant)
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 cup light brown sugar, packed
  • 0.5 cup unsalted butter, at room temperature
  • 2 large eggs, at room temperature
  • 1.5 teaspoons vanilla extract
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) while preparing a 9x12-inch baking dish with a lovely layer of grease and flour.
  • Combine brown sugar, pecans, butter, and flour in a small bowl to create a delectable streusel topping; set aside.
  • Add boiling water to oats in a bowl. In a separate bowl, mix flour, baking powder, baking soda, and salt together.
  • In a large mixing bowl, use an electric mixer to cream together brown sugar and butter until they are light and fluffy. Add the eggs one at a time, beating briefly after each addition. Scrape down the sides of the bowl and continue beating until the mixture is smooth. Mix in oats, vanilla extract, and cinnamon. Gently fold in the flour mixture using a rubber scraper or wooden spoon. Pour the batter into the prepared baking dish and top with streusel.
  • Bake in the oven until a toothpick comes out clean when inserted into the center, approximately 35 minutes.
