Moist and delicious oatmeal-pecan muffins, perfect for a healthy and convenient breakfast or snack.
Ingredients:
  • 0.33333334326744 cup pecans, or more to taste
  • 0.75 cup applesauce
  • 0.5 cup vegetable oil
  • 0.5 cup real maple syrup
  • 0.25 cup packed brown sugar
  • 0.5 cup whole wheat flour
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon baking soda
  • 1.5 cups rolled oats
  • 0.5 cup dried cranberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), and prepare a 12-cup muffin tin by greasing it or lining the cups with paper liners.
  • Place pecans on a baking sheet in the preheated oven. Toast them until fragrant, stirring occasionally, for 7 to 10 minutes. Once cooled, chop them.
  • In a large bowl, blend together applesauce, vegetable oil, maple syrup, brown sugar, and egg until fully mixed.
  • Combine whole wheat flour, all-purpose flour, baking powder, baking soda, and salt in a separate bowl. Gently mix in the applesauce mixture until just combined. Fold in oats, cranberries, and chopped pecans. Spoon batter into the muffin cups.
  • Bake in the preheated oven for 20-25 minutes, or until tops spring back when lightly pressed. Let cool in the tins for 5 minutes, then serve warm or transfer to a wire rack to cool completely.
