Irresistible oatmeal chocolate chip muffins packed with pecans, perfect for a quick and delicious breakfast on the go!
Ingredients:
  • 1.25 cups quick cooking oats
  • 1.25 cups milk
  • 1 cup chopped pecans, divided
  • 0.75 cup packed brown sugar, divided
  • 0.75 cup semisweet chocolate chips
  • 0.5 cup vegetable oil
  • 1 egg
  • 1.25 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
Instructions:
  • In a medium bowl, mix oats and milk; let it sit for 15 minutes. Preheat the oven to 400°F (205°C) and grease a 12-cup muffin tin or line with paper liners.
  • Combine 1/2 of the chopped pecans, 1/2 cup brown sugar, chocolate chips, vegetable oil, and egg into the oat and milk mixture, stirring gently.
  • In a separate bowl, mix the flour, baking powder, and salt. Gently fold in the oat mixture until just combined. Divide the batter evenly among the muffin cups, filling each 2/3 full. Sprinkle the tops with the remaining brown sugar and pecans.
  • Bake until the tops spring back when lightly pressed, around 20 to 25 minutes in the preheated oven.
