Irresistible oatmeal cookies with plump, flavorful raisins steeped to perfection.
Ingredients:
  • 3 eggs, beaten
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • 1 cup butter
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 cups rolled oats
  • 1 cup chopped pecans
Instructions:
  • In a small bowl, mix together eggs, vanilla, and raisins. Cover and allow to stand for 1 hour.
  • Preheat oven to 350°F (175°C).
  • Combine butter, brown sugar, and white sugar in a large bowl until creamy. Mix in flour, cinnamon, and baking soda. Add raisins, rolled oats, and nuts, stirring until well combined.
  • Spoon small portions of the mixture onto a bare baking sheet. Bake for 10 minutes or until golden brown.
