Oatmeal Toffee Cookies

Award-winning oatmeal cookies with chocolate-covered toffee bits.
Ingredients:
  • 0.75 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1.5 cups rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup chopped pecans
  • 2 cups toffee baking bits
Instructions:
  • Preheat your oven to 300 degrees F (150 degrees C) and prepare your cookie sheets by lining them with parchment paper.
  • Cream together butter and brown sugar in a medium bowl until fluffy. Mix in egg and vanilla until well combined. Sift in flour, salt, and baking soda, then fold into the mixture. Add rolled oats, followed by pecans and chopped candy bar pieces.
  • Spoon rounded tablespoons of dough onto the baking sheets, gently press down to flatten. Bake in the preheated oven for 10 to 18 minutes until cookies look dry.
