Chewy Chocolate-Toffee-Oatmeal Cookies with Cranberries

Indulgent cookies loaded with bittersweet chocolate, toffee, oats, and tangy cranberries.
Ingredients:
  • 1 cup butter, softened
  • 0.75 cup brown sugar
  • 0.75 cup white sugar
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1.5 cups rolled oats
  • 1 cup bittersweet chocolate chips
  • 1 cup toffee candy bits
  • 1 cup dried cranberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and line two baking sheets with parchment paper.
  • In a large bowl, whip together butter, brown sugar, and white sugar until creamy using an electric mixer. Mix in egg and vanilla extract. Add flour and baking soda, then gently mix in oats, chocolate chips, toffee, and cranberries.
  • Spoon generous dollops of the cookie dough onto the prepared baking sheets.
  • Bake until edges are golden, 12 to 15 minutes in a preheated oven. Cool cookies on wire racks.
