Maple-sweetened spiced pumpkin muffins - a speedy and delightful fall breakfast treat.
Ingredients:
  • no-stick cooking spray
  • 0.5 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.5 cup white sugar
  • 1 teaspoon pumpkin pie spice
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1.25 cups pumpkin puree
  • 2 eggs, beaten
  • 0.25 cup maple syrup
  • 0.75 cup quick-cooking rolled oats
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously coat 6 muffin cups with cooking spray.
  • In a large bowl, combine all-purpose flour, whole wheat flour, sugar, salt, pumpkin pie spice, baking powder, baking soda, cinnamon, and nutmeg. Mix until evenly combined. Add pumpkin puree, milk, eggs, and maple syrup to the dry ingredients and stir until smooth. Gently fold in oats. Fill muffin cups to the top with the batter and bake.
  • Bake in the preheated oven for 20 to 30 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool for 5 to 10 minutes before serving.
