Old Fashioned Coconut Drops

I coat these coconut drops in sweet sugar syrup and brown sugar glaze for extra decadence.
Ingredients:
  • 1 cup sifted all-purpose flour
  • 4 tablespoons butter
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 cups shredded coconut
  • 0.5 cup raisins
  • 1 egg, beaten
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while you lightly grease the cookie sheets.
  • In a medium mixing bowl, blend flour and margarine together. Add sugar, cinnamon, and baking powder, mixing well. Incorporate the egg, then fold in coconut, raisins, and vanilla. Spoon rough egg-sized heaps of dough onto cookie sheets.
  • Bake until lightly golden, around 8 minutes.
