Indulge in a decadent coconut cream pie with luscious homemade custard filling, topped with whipped cream and toasted coconut.
Ingredients:
  • 1 cup sweetened flaked coconut
  • 3 cups half-and-half
  • 0.5 cup all-purpose flour
  • 2 large eggs, beaten
  • 0.25 teaspoon salt
  • 1 (9 inch) pie shell, baked
  • 1 cup frozen whipped topping, thawed
Instructions:
  • Prepare all ingredients.
  • Preheat the oven to 350°F (175°C) and evenly spread coconut on a baking sheet.
  • Bake in the preheated oven, stirring occasionally, until golden brown, approximately 5 minutes.
  • In a medium pot, mix half-and-half, sugar, flour, eggs, and salt. Cook over low heat, stirring constantly until the mixture thickens and coats the back of a wooden spoon, about 15 minutes.
  • Take the pan off the heat and mix in 3/4 cup of toasted coconut and vanilla; save the rest of the toasted coconut for decorating the pie.
  • Pour the luscious custard into the delicate pie shell and let it chill until perfectly set, approximately 4 hours.
  • Garnish with fluffy whipped topping and sprinkle with the reserved toasted coconut.
