Irresistible classic layer cake with fluffy 7-minute frosting and coconut flakes topping.
Ingredients:
  • 4 egg yolks
  • 1 cup milk
  • 1.5 cups white sugar
  • 0.5 cup butter
  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1.75 cups white sugar
  • 4 egg whites, room temperature
  • 0.5 teaspoon cream of tartar
  • 2 cups sweetened flaked coconut, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease three 9-inch round cake pans.
  • In a mixing bowl, combine sugar, eggs, and egg yolks. Beat with an electric mixer until the mixture is light and fluffy, which should take about 5 minutes.
  • In a saucepan, gently warm the milk and butter until the butter is melted, for about 2 to 3 minutes. Take the saucepan off the heat and allow it to cool slightly.
  • In a bowl, mix together flour and baking powder. Pour into the egg mixture. Add vanilla extract and milk mixture, then beat well with an electric mixer. Divide the batter evenly among the prepared pans.
  • Bake in the preheated oven for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  • Clean mixing bowl and beaters thoroughly. Use an electric mixer to beat egg whites and cream of tartar until foamy.
  • In a saucepan, heat sugar and water until boiling. Continue to boil until a candy thermometer registers 242 degrees F (116 degrees C), which should take about 3 to 4 minutes.
  • On high speed, beat egg whites until stiff peaks form, about 6 to 8 minutes. Carefully add hot sugar mixture along the side of the bowl while beating, avoid the beaters. Stir in vanilla extract.
  • Place one of the cooled cake layers on a serving platter and frost the top. Repeat with the second and third cake layers. Frost the sides and top of the cake generously. Sprinkle coconut on top and press onto the sides of the cake to coat evenly.
