Irresistible frosted spice cookies, a sweet treat to elevate any day.
Ingredients:
  • 1 1/2 cups granulated sugar
  • 1 cup shortening
  • 1/2 cup molasses
  • 2 eggs
  • 3 teaspoons baking soda
  • 1/2 cup water
  • 5 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon salt
  • 1 envelope plus 2 teaspoons unflavored gelatin
  • 1 cup cold water
  • 1 cup granulated sugar
  • 2 1/4 cups powdered sugar
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
Instructions:
  • Combine 1 1/2 cups granulated sugar, shortening, molasses, and eggs in a large bowl until smooth. In a small bowl, dissolve baking soda in water, then stir into the molasses mixture. Add remaining cookie ingredients and mix well. Chill covered in the refrigerator for at least 2 hours.
  • Preheat oven to 375°F and lightly grease a cookie sheet. Roll the dough to 1/4 inch thickness on a floured surface. Use a floured 2 3/4-inch round cutter to cut the dough (or use a clean food can with both ends removed). Place rounds about 2 inches apart on the cookie sheet.
  • Bake for 8 to 10 minutes until lightly browned. Then, transfer from the cookie sheet to a cooling rack and allow to cool completely for about 30 minutes.
  • In a 2-quart saucepan, sprinkle gelatin over cold water to soften, then stir in 1 cup of granulated sugar. Bring to a rolling boil, then lower heat and simmer uncovered for 10 minutes. In a large bowl, combine powdered sugar with the hot gelatin mixture. Use an electric mixer on medium speed to beat for about 2 minutes until foamy. Mix in vanilla, baking powder, and salt, then beat on high speed for 12 to 15 minutes until soft peaks form. Frost the bottoms of cookies, allow to dry for 2 to 3 hours before storing.
