Creamy, cheesy one skillet chicken dish with fresh vegetables, ready in under 30 minutes.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound skinless, boneless chicken thighs, cut into strips
  • 1 medium onion, finely diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 (5.6 ounce) package Knorr® Rice Sides™ - Chicken
  • 2 cups water
  • 1.5 teaspoons dried basil
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • In a non-stick skillet over medium-high heat, sear the chicken in hot oil until fully cooked and no longer pink in the center. Transfer the cooked chicken to a bowl.
  • Combine diced onion, carrot, and celery in the pan, allowing them to cook until beginning to soften, for around 5 minutes. Season with salt and pepper. Add water and Knorr® Rice Sides™ - Chicken flavor, then bring to a high simmer. Reduce heat to medium-low, cover, and let simmer for 7 minutes.
  • Fold in succulent cooked chicken, fragrant basil, and luscious shredded Cheddar cheese.
