Try this easy, one pot creamy ground beef and orzo dish - perfect for busy weeknights. Ready in just 40 minutes with minimal effort.
Ingredients:
  • 1 tablespoon oil
  • 10 ounces lean ground beef
  • 1 small onion, diced
  • 3 cloves minced garlic, or more to taste
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 3/4 cup orzo
  • 3 cups prepared marinara sauce
  • 1/2 cup water
  • 1 cup half-and-half, divided
  • 3 tablespoon mascarpone cheese
  • 3/4 cup shredded fontina cheese
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • In a large cast iron skillet, heat oil over medium heat until it shimmers, about 3 minutes. Add ground beef and break up clumps with a spatula while cooking for a few minutes. Mix in onion, garlic, and Italian seasoning. Keep cooking and stirring until beef is browned and crumbly, about 5 to 8 minutes.
  • Spread the orzo pasta evenly over the mixture. Mix in marinara sauce, water, and 1/2 cup half-and-half. Cover and let it simmer on medium-low heat for 15 minutes.
  • Uncover, mix in the remaining 1/2 cup of half-and-half and mascarpone. Evenly spread the mixture in the skillet, then sprinkle with shredded fontina and Parmesan cheeses.
  • Preheat the broiler in the oven and position a rack 6 inches below the heat source.
  • Broil until the cheese turns golden and bubbles, approximately 3 minutes.
