One Pot Pinto Beans

Simmer seasoned pinto beans until creamy, then mix with mozzarella and pico de gallo for a spicy, delicious dish.
Ingredients:
  • 6.25 cups water
  • 1 cup condensed chicken broth
  • 2 pounds dried pinto beans
  • 5 cloves cloves garlic, chopped
  • 0.5 red onion, chopped
  • 1 tablespoon red pepper flakes, or to taste
  • salt, or to taste
  • 1 (8 ounce) package shredded mozzarella cheese
  • 1 (16 ounce) container pico de gallo
Instructions:
  • In a large saucepan, mingle water, condensed chicken broth, beans, garlic, onion, and crushed red pepper flakes; season generously with salt and pepper. Simmer covered, stirring occasionally, until beans are tender, around 3 1/2 hours. Add more water if needed to prevent drying out.
  • Use a potato masher to mash the cooked beans to your liking, then mix in mozzarella and pico de gallo before serving.
