Savory corned beef hash with onions, bell peppers, topped with eggs, tomatoes, and broiled to perfection.
Ingredients:
  • 1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
  • 0.25 cup finely diced onion
  • 0.25 cup finely diced green bell pepper
  • 4 large eggs
  • 2 tablespoons canned diced tomatoes and green chiles
  • 0.25 cup shredded sharp Cheddar cheese
Instructions:
  • In an ovenproof skillet, sauté corned beef hash, onion, and bell pepper until veggies soften and hash browns, about 10-15 minutes. Create 4 wells in the hash for the eggs, then take off the heat.
  • Preheat the broiler with the oven rack positioned 6 inches below the heat source.
  • Gently crack one egg into each hollow and garnish with diced tomatoes.
  • Place skillet in the oven under the broiler and cook the eggs to your liking, usually takes 4 to 10 minutes. Keep an eye on them to prevent burning. Carefully take the skillet out of the oven, then add shredded cheese, salt, and pepper as toppings.
