One-minute vegetarian lettuce burritos

Quick and easy dinner with fresh, wholesome ingredients.
Ingredients:
  • 3 x 125g Uncle Ben’s® Mexican Rice and Beans Cups
  • 12 large cos lettuce leaves
  • 77.55 gm sour cream
  • 250.00 ml grated cheddar
  • 300g can corn kernels, drained
  • 1 avocado, thinly sliced
  • 82.50 ml fresh coriander leaves
  • Lime wedges, to serve
Instructions:
  • Cook rice according to package instructions, then gently separate grains with a fork to achieve a light and fluffy texture.
  • Trim 6cm off the base of each lettuce leaf. Spread the leaves with sour cream. Top each leaf with rice, cheese, corn, avocado, and coriander. Fold the base of the leaf first, then fold in the sides, leaving the tops exposed. Secure with toothpicks and serve with lime wedges.
