Kid-friendly Beef Meatball Pasta Bake: A budget-friendly one-pan dish combining savory meatballs, pasta, tomato sauce, and gooey melted cheese.
Ingredients:
  • 500g 3 star beef mince
  • 3 garlic cloves, crushed
  • 82.50 ml packaged multigrain breadcrumbs
  • 1 egg, lightly beaten
  • 20.00 ml finely chopped fresh basil leaves, plus extra leave to serve
  • 82.50 ml grated parmesan
  • 36.40 gm extra virgin olive oil
  • 1 brown onion, thinly sliced
  • 2 carrots, coarsely grated
  • 2 dried bay leaves
  • 44.40 gm tomato paste
  • 700g bottle tomato passata
  • 255.00 gm chicken stock
  • 312.50 ml small dried pasta shells
  • 1/2 x 220g tub cherry bocconcini
  • 62.50 ml finely chopped fresh basil
  • 1 small garlic clove, finely chopped
  • 1 tsp lemon zest
Instructions:
  • Preheat oven to 180C (160C fan-forced).
  • In a bowl, mix together beef, garlic, breadcrumbs, egg, basil, and parmesan. Season with salt and pepper. Shape mixture into 8 balls. In a large ovenproof frying pan, heat half of the oil over medium-high heat. Brown meatballs by cooking and turning for 5 minutes. Transfer to a plate.
  • In the same pan, heat the remaining oil over medium-high heat. Add the onion, carrot, and bay leaves, and cook for 3 minutes until the onion softens. Stir in the tomato paste, then add the passata, stock, and 1 cup of water. Bring to a simmer and add the pasta. Arrange the meatballs on top, cover, and bake for 20 minutes until the pasta is almost al dente. Sprinkle bocconcini on top and bake uncovered for 5 minutes until the cheese melts.
  • Prepare the Basil Gremolata by mixing the ingredients in a bowl.
  • Garnish the pasta bake with a sprinkle of fresh basil gremolata.
