One-Pan Roasted Pork Loin Dinner with Bacon, Brussels Sprouts and Red Potatoes

Savory roasted pork loin with crispy bacon, tender Brussels sprouts, and flavorful red potatoes - a quick and delicious one-pan meal ready in 50 minutes!
Ingredients:
  • 1 teaspoon olive oil
  • 4 cloves garlic, crushed
  • 1/2 cup julienne-cut red onion
  • 1 1/2 lb Brussels sprouts, trimmed, halved
  • 1 1/2 lb small red potatoes, quartered
  • 8 to 10 fresh whole sage leaves
  • 1 1/2 lb boneless pork loin
  • 4 slices thick-sliced bacon, cut into 1-inch pieces
  • Salt and fresh ground black pepper to taste
Instructions:
  • Preheat your oven to 450°F and gently coat a 16x11-inch roasting pan with 1 tablespoon of olive oil.
  • Place the garlic, onion, Brussels sprouts, potatoes, and sage leaves in a pan, season with salt and pepper, then toss everything together.
  • Lay the pork loin on top of the vegetables and season generously with salt and pepper. Finish by covering both the pork and vegetables with crispy bacon slices.
  • Roast for 30 minutes, making sure to mix the sprouts and potatoes every 15 minutes to ensure even roasting, or until a meat thermometer inserted in the center of the thickest part of the pork reads 145°F.
  • Take the pork out of the oven and transfer it to a cutting board. Lightly cover it with foil and let it rest for 8 to 10 minutes. Put the pan with vegetables back in the oven and roast for an additional 10 minutes.
  • Slice pork into elegant 1/2-inch-thick pieces and plate with savory roasted vegetables.
