Whip up a quick and nutritious one-pan salmon and broccoli bake for dinner.
Ingredients:
  • 4 green shallots, trimmed, thinly sliced, plus extra, to serve
  • 2 garlic cloves, crushed
  • 1 long fresh red chilli, thinly sliced, plus extra, to serve
  • 2 tsp finely grated fresh ginger
  • 60ml (1/4 cup) soy sauce
  • 57.20 gm Pure Australian Honey
  • 4 x 200g skinless salmon fillets
  • 500g broccoli, cut into florets
  • 18.20 gm olive oil
  • Steamed jasmine rice, to serve
Instructions:
  • Mix shallot, garlic, chili, ginger, soy sauce, honey, and sesame oil in a large glass or ceramic dish. Add salmon fillets and ensure they are well coated. Allow to marinate for 30 minutes.
  • Preheat the oven to 200C/180C fan forced. Line a baking tray with baking paper. Toss broccoli in olive oil and season well. Roast on the prepared tray for 15 minutes.
  • Create a space in the middle of the tray by moving the broccoli to the sides. Put the salmon fillets in the center and pour the marinade over them. Roast for 12-15 minutes until the salmon is cooked. Finish by garnishing with extra green shallot and chili. Serve with steamed rice.
