Cheesy one-pan spaghetti bolognese bake - a kid-friendly favorite on repeat!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 eggplant, finely chopped
  • 1 red capsicum, finely chopped
  • 250g pork and veal mince
  • 44.40 gm tomato paste
  • 400g can diced tomatoes
  • 125g dried Italian Spaghetti, broken into 6cm lengths
  • 125.00 ml finely shredded fresh basil leaves
  • 125.00 ml finely grated parmesan
  • 3 eggs, lightly beaten
  • 250.00 ml grated pizza cheese
  • 60g mixed salad leaves
  • 1 Lebanese cucumber, halved lengthways, sliced
  • 21.00 gm lemon juice
Instructions:
  • Preheat your oven to 200C/180C fan-forced.
  • Heat half of the oil in a large flameproof baking dish on medium-high. Saute onion, garlic, eggplant, and capsicum for 5 to 7 minutes until soft. Add the mince and cook for 5 minutes until browned. Stir in the paste and cook for 30 seconds until aromatic. Pour in tomatoes and 1 2/3 cups water, bringing it to a boil. Add spaghetti and cook for 10 to 12 minutes until tender. Remove from heat and mix in basil, parmesan, and egg. Season with salt and pepper. Serve sprinkled with cheese.
  • Place in the oven and bake for 20 to 25 minutes until golden and set. Combine salad leaves and cucumber, then drizzle with lemon juice and the remaining oil. Enjoy the baked dish with the fresh salad.
