One-pan spicy pasta and sausage dish - ideal for any occasion.
Ingredients:
  • 500.00 gm boiling water
  • 750g thick gourmet beef sausages
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 44.40 gm tomato paste
  • 123.75 gm red wine
  • 690g jar tomato pasta sauce
  • 510.00 gm beef style liquid stock
  • 500g dried orecchiette pasta
  • 1 large zucchini, diced into 1cm pieces
  • 250.00 ml grated pizza cheese
  • Fresh flat-leaf parsley leaves, to serve
  • 36.40 gm extra virgin olive oil
  • 2 garlic cloves, finely chopped
  • 1 long red chilli, finely chopped
  • 375.00 ml fresh coarse sourdough breadcrumbs
  • 1 lemon, zested
Instructions:
  • Remove sausage meat from casing and cut into 3cm pieces. Heat oil in a large, deep flameproof frying pan. Add onion and cook until softened. Stir in garlic and sausage; cook until browned. Mix in tomato paste, then add wine and bring to a boil. Stir in tomato pasta sauce and simmer for 5 minutes. Pour in stock, add pasta and boiling water. Cover and simmer for 10 minutes. Add zucchini, stir occasionally, and simmer until pasta is tender. Season to taste.
  • Preheat the grill to medium-high heat. Sprinkle the cheese over the pasta and grill for 5 minutes until golden and melted.
  • While you wait, prepare the Pangritata by heating oil in a medium frying pan over medium-high heat. Add garlic and chilli and cook, stirring, for 2 minutes until fragrant. Add breadcrumbs and continue to cook, stirring, for 3 to 4 minutes until golden and crisp. Mix in lemon zest. Serve pasta topped with Pangritata and parsley.
