Effortless one-pot sausage meal for a flavorful dinner in no time
Ingredients:
  • 18.20 gm olive oil
  • 375g lean Italian beef sausages
  • 1 large brown onion, finely chopped
  • 2 tsp mixed herbs
  • 250g cherry tomatoes, halved
  • 1 medium red capsicum, chopped
  • 400g can diced tomatoes
  • 2 x 250g packets microwavable white rice
  • 125.00 ml frozen peas
  • 62.50 ml fresh basil leaves, finely chopped
  • 62.50 ml fresh flat-leaf parsley leaves, finely chopped
  • Grated cheddar cheese, to serve
Instructions:
  • In a deep frying pan, heat oil over medium-high heat. Cut one end of each sausage and gently squeeze out the meat into the pan to form small meatballs. Remove and discard the casings. Cook the meatballs, flipping them occasionally, until they are browned, about 4 to 5 minutes.
  • Sauté onion and garlic until softened, about 3 minutes. Stir in dried herbs, cherry tomato, capsicum, and diced tomatoes. Season with salt and pepper. Cover and bring to a boil, then simmer on low heat for 8 minutes until the sauce thickens and tomatoes break down slightly.
  • Combine the rice and peas in the pan and cook for 2 minutes, or until heated through. Add in the fragrant basil and parsley, sprinkle with cheese, then serve.
