One-Pot Soba with Salmon

Travel to Japan with this quick and flavorful one-pot dinner bursting with vibrant veggies.
Ingredients:
  • 1 tablespoon sesame oil
  • 1 tablespoon finely chopped gingerroot
  • 1/4 cup honey
  • 4 cups water
  • 1/2 cup reduced-sodium soy sauce
  • 6 green onions, sliced diagonally, white and green parts separated
  • 2 carrots, cut into matchstick pieces (about 1 cup)
  • 1 lb skinned salmon, cut into 1-inch cubes
  • 6 oz uncooked soba (buckwheat) noodles
  • 1 box (9 oz) frozen sugar snap peas
  • 1 tablespoon lime juice
Instructions:
  • In a 5-quart Dutch oven, whisk together oil, gingerroot, garlic, and honey until well combined. Stir in water and soy sauce, then bring the mixture to a boil over high heat.
  • Gently place the chopped green onion whites, carrots, and salmon into the pot and bring the mixture back to a boil. Lower the heat and simmer for 2 minutes, then turn up the heat. Add the noodles and let it simmer. Cook for an additional 6 minutes over medium heat.
  • Microwave the frozen sugar snap peas for 3 1/2 minutes following the package instructions. Allow them to stand for 1 minute. Stir them into the noodle mixture, cover, remove from heat, and let stand for 1 more minute.
  • Add the zesty lime juice, garnish with fresh green onions, and enjoy your dish.
