Indulgent cheesy mushroom and onion egg bake for a luxurious weekend brunch.
Ingredients:
  • 1.5 tablespoons extra-virgin olive oil
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 onion, sliced
  • 1 clove garlic, minced
  • 1.5 tablespoons Italian seasoning
  • 5 eggs
  • 2 tablespoons garlic and herb cheese spread (such as Boursin®)
  • salt and ground black pepper to taste
  • 0.33333334326744 cup shredded mozzarella cheese
Instructions:
  • In a skillet over medium heat, sauté mushrooms, onion, and garlic in olive oil until the onion is caramelized for about 15 minutes. Season with Italian seasoning.
  • In a bowl, whisk together eggs with garlic and herb cheese spread until slightly chunky. Season generously with salt and black pepper.
  • Transfer the beaten eggs into the skillet with the mushroom mixture. Cook and stir until the eggs are almost cooked through, approximately 1 minute. Gently fold in the mozzarella cheese until it is just melted, around 30 seconds.
