Caramelized onion jam: Sweet, sticky spread for sandwiches or crackers made by simmering onions in sugar until thick.
Ingredients:
  • 0.5 cup white sugar
  • 4 cups onion, coarsely chopped
  • 0.5 cup red wine vinegar
Instructions:
  • In a heavy skillet over medium heat, heat vegetable oil. Stir in sugar with a wooden spoon, continuously stirring until mixture turns a light caramel color, approximately 10 minutes. Be cautious, the mixture will be very hot.
  • Combine onions, salt, and black pepper with the sugar mixture, stirring continuously over medium heat for about 15 minutes until the sugar is dissolved and the onions are caramelized.
  • Simmer the red wine vinegar in the onion mixture until it thickens into a jam-like consistency over 30 minutes. Allow it to cool before serving.
