Savory onion-poppy seed filled braided egg bread - perfect for special occasions.
Ingredients:
  • 1 (.25 ounce) package instant yeast
  • 3.75 cups bread flour, divided
  • 0.75 cup warm water
  • 0.5 cup vegetable oil
  • 1.5 teaspoons salt
  • 0.75 cup chopped onion
  • 0.33333334326744 cup poppy seeds, plus more for garnish
  • 0.25 teaspoon salt
  • 1 tablespoon all-purpose flour
  • 3 tablespoons melted butter
  • 1 egg
Instructions:
  • Combine yeast and 3/4 cup of bread flour, then sprinkle the mixture over warm water (not exceeding 100°F/40°C) in a small bowl. Allow it to sit for 5 minutes until the yeast softens and a creamy foam forms.
  • In a large mixing bowl, combine the yeast mixture with 2 eggs, vegetable oil, sugar, and 1 1/2 teaspoon of salt; mix thoroughly. Stir in half of the bread flour until well combined, then gradually add the remaining flour, mixing well after each addition. Transfer the dough to a lightly floured surface, knead for about 8 minutes until smooth and elastic. Place the dough in a lightly oiled large bowl, cover with a cloth, and let it rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 2 hours.
  • Prepare a greased baking sheet. Combine onion, poppy seeds, 1/4 teaspoon salt, all-purpose flour, and butter in a bowl. Divide mixture into 2 equal parts. Set aside. Divide dough into 2 equal parts and roll each into approximately 30x4 inch strips. Spread onion mixture down the center of each strip lengthwise. Fold the edges of the dough over the filling, pinching to seal.
  • Line up the strands next to each other with the seam side facing down. Now, braid the strands by crossing them over each other starting from the middle, ensuring the seam side is still facing down. After both sides are braided, pinch the ends to create a ring shape. Transfer the ring to the baking sheet and cover it with plastic wrap. Let the ring rise until it triples in size, approximately 1 1/2 hours.
  • Preheat the oven to 325 degrees F (165 degrees C) and move the rack to the lowest position. Mix 1 egg and a pinch of salt in a bowl, then brush the braided ring with the egg mixture. Optionally, sprinkle with more poppy seeds.
  • Bake in a hot oven until the top is beautifully golden and the bottom of the loaf sounds hollow when tapped, rotating the pan halfway through to ensure even browning, for 45 to 50 minutes.
