Family-favorite steak sandwich with Caesar dressing on crusty baguette.
Ingredients:
  • 36.40 gm olive oil
  • 2 garlic cloves, crushed
  • 2 tsp chopped thyme
  • 250g vine-ripened cherry tomatoes
  • 2 x 200g Graze Grass Fed Beef Porterhouse Steaks
  • 1 Baguette*, split, halved crossways
  • 185ml caesar salad dressing
  • 40.00 ml finely grated parmesan
  • 120g pkt Baby Rocket
  • 1/2 red onion, thinly sliced
  • 1 avocado, stoned, peeled, thinly sliced
Instructions:
  • Preheat your barbecue grill or chargrill to medium-high heat. Mix together the oil, garlic, and thyme in a small bowl. Brush 2 tsp of the flavorful oil over the tomatoes. Grill the tomatoes, turning occasionally, for about 5 minutes until they begin to split open. Then, transfer them to a plate.
  • Brush the steaks with a generous amount of the oil mixture, ensuring they are well coated, then season them generously. Sear the steaks for about 3 minutes on each side for a perfect medium-rare doneness, or adjust cooking time to your preference. Once cooked, transfer the steaks to a plate, cover them loosely with foil, and allow them to rest for 5 minutes. Finally, thinly slice the steaks before serving.
  • Brush the remaining oil mixture over the cut side of each baguette slice and cook cut-side down until lightly toasted, about 2-3 minutes.
  • Mix the dressing and Parmesan in a small bowl. Spread half of the dressing mixture on the cut side of each baguette slice. Layer with rocket, tomato, steak, onion, and avocado. Finish by drizzling with the remaining dressing mixture.
