20-minute dinner: Savory open-faced ground beef and bell pepper sandwiches.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 medium green bell pepper, cut into 1/2-inch strips
  • 1 medium red bell pepper, cut into 1/2-inch strips
  • 1 small onion, cut into thin wedges
  • 1/2 cup creamy Italian dressing
  • 1 loaf (1 lb) Italian bread (12 inches long), halved lengthwise
  • 4 slices (6 oz) thinly sliced provolone cheese, quartered
Instructions:
  • In a 12-inch skillet, sauté ground beef, bell peppers, and onion over medium-high heat for 5 to 7 minutes until the beef is fully cooked; remember to stir occasionally. Once done, drain any excess liquid and then mix in 1/4 cup of the dressing.
  • Spread the remaining 1/4 cup of dressing on the cut sides of the bread. Place both halves, cut sides up, on an ungreased large cookie sheet and broil 4 to 6 inches from the heat for 3 to 5 minutes until lightly toasted. Remove bread from the broiler and spread the beef mixture on the cut halves of bread. Top with cheese.
  • Place the dish back into the broiler, positioning it 4 to 6 inches away from the heat source, and cook for 2 to 3 minutes or until the cheese is deliciously melted. Cut each half into 2 pieces before serving.
