Honor the Anzacs with classic biscuits.
Ingredients:
  • 250.00 ml plain flour
  • 100.00 gm good-quality whole rolled oats
  • 65.00 gm shredded coconut
  • 250.00 ml flaked almonds
  • 135.00 gm brown sugar (firmly packed)
  • 20.00 ml orange rind, finely grated
  • 125g butter
  • 53.60 gm golden syrup
  • 40.00 gm water
  • 1.25 gm bicarbonate of soda
Instructions:
  • Preheat your oven to 160°C and cover 2 large baking trays with non-stick baking paper.
  • In a large bowl, mix together the flour, oats, coconut, almonds, sugar, and orange zest.
  • Combine butter, golden syrup, and water in a small saucepan. Heat over medium heat, stirring until butter melts and mixture is smooth.
  • Mix in the bicarbonate of soda until well incorporated with the oat mixture.
  • Form balls with a level tablespoon of the mixture and place them on the lined trays, ensuring they are about 5cm apart. Flatten each ball until they are around 1cm thick. Bake for 18 minutes or until light golden, swapping trays between upper and lower oven shelves halfway through cooking.
  • Allow to cool for 10 minutes before transferring to a wire rack to cool fully.
