Orange and almond self-saucing pudding

Indulge in a decadent almond cake with a delightful zesty twist.
Ingredients:
  • Melted butter, to grease
  • 150g (1 cup) self-raising flour
  • 100g (1/2 cup) caster sugar
  • 55g (1/2 cup) almond meal
  • 20.00 ml finely grated orange rind
  • 125ml (1/2 cup) milk
  • 50g butter, melted, cooled
  • 10.00 gm cornflour
  • 100g (1/2 cup) caster sugar, extra
  • 375ml (1 1/2 cups) fresh orange juice
  • Icing sugar, to dust
  • Vanilla custard, to serve
Instructions:
  • Preheat your oven to 180°C. Grease a 1.5L (6-cup) ovenproof dish with melted butter and place it on a baking tray lined with non-stick paper. In a large bowl, sift the flour and add the sugar, almond meal, and orange rind.
  • In a jug, combine the milk, egg, and butter by whisking until smooth. Mix this into the flour until smooth using a wooden spoon. Pour the batter into the prepared dish and use the back of a spoon to even out the surface.
  • In a bowl, mix cornflour and extra sugar, then sprinkle over the pudding mixture. Heat the orange juice in a small saucepan over medium heat until just boiling. Slowly pour the hot orange juice over the back of a spoon onto the mixture.
  • Bake for 45-50 minutes until the top is cake-like and a skewer inserted halfway into the center comes out clean.
  • Allow mixture to rest for 5 minutes. Sprinkle with powdered sugar and enjoy while warm with custard on the side.
