Orange and balsamic beetroot

Ingredients:
  • 40.00 ml balsamic vinegar
  • 86.63 gm orange juice
  • 32.00 gm brown sugar
  • 18.20 gm olive oil
  • 6 medium beetroot
Instructions:
  • Preheat your oven to 220°C. In a jug, mix vinegar, orange juice, sugar, oil, salt, and pepper, then whisk well. Transfer the mixture into a baking dish.
  • Trim beetroot stalks, leaving a 3cm stem, gently scrub without peeling, and pat-dry with paper towels.
  • Toss beetroot in orange juice mixture in baking dish. Cover and roast for 1 hour until tender. Cut in half and serve drizzled with pan juices.
