Orange and beetroot chopped salad

Create a vibrant summer salad with fresh beets and juicy oranges.
Ingredients:
  • 36.40 gm extra-virgin olive oil
  • 21.00 gm orange juice
  • 1 baby cos lettuce
  • 1 large orange, peeled, roughly chopped
  • 450g can baby beetroot, drained, chopped
  • 1 small carrot, peeled, grated
  • 28.75 gm chopped walnuts, toasted
  • 62.50 ml fresh flat-leaf parsley leaves
Instructions:
  • Combine oil, orange juice, salt, and pepper in a screw-top jar. Secure the lid tightly and shake vigorously to blend.
  • Prepare the lettuce by removing the outer leaves and core, then separate the leaves and wash them. Gently pat them dry with a tea towel and roughly chop them. Combine the lettuce with orange slices, beetroot, carrot, walnuts, and parsley in a bowl. Add the dressing, toss everything together, and serve.
