Festive Easter cake adorned with eggs and icing for a sweet Easter celebration. Have a safe and happy Easter!
Ingredients:
  • 215.00 gm caster sugar
  • 125g unsalted butter, softened
  • 3 tsp finely grated orange rind
  • 4 eggs
  • 160g self-raising flour
  • 150g desiccated coconut
  • 42.00 gm freshly squeezed orange juice
  • Easter eggs, to serve
  • Icing sugar, to serve
Instructions:
  • Preheat your oven to 160°C. In a large bowl, combine sugar, butter, and orange rind, then beat with electric beaters for 4 minutes until light and creamy. Gradually add eggs, one at a time, making sure to beat well after each addition.
  • Combine the flour and coconut with the mixture, along with the orange juice. Transfer the batter into a 22cm-round cake pan that has been greased and lined with baking paper. Bake for 50 minutes, or until a skewer comes out clean when tested.
  • Once cooled, adorn with festive Easter eggs and a sprinkle of powdered icing sugar.
