Tangy and spicy twist on traditional glazed ham is irresistibly succulent.
Ingredients:
  • 7kg whole leg ham, on the bone
  • Whole cloves, to stud
  • 125g (3/4 cup, lightly packed) brown sugar
  • 170g (1/2 cup) orange marmalade
  • 1 tsp Chinese five spice
  • 58.50 gm dijon mustard
  • 500ml (2 cups) fresh orange juice
Instructions:
  • Position the oven shelf on the lowest level and preheat the oven to 170°C. Using a small sharp knife, create a zigzag pattern around the shank, approximately 10cm from the end. Delicately slide the knife under the rind along the edge of the ham. Lift the rind off gently by separating it from the fat using your fingers. Score the fat in a diamond pattern about 5mm deep and stud the centers of the diamonds with cloves.
  • Mix the sugar, marmalade, Chinese five spice, and mustard in a bowl until the mixture is smooth. Put the ham in a large baking dish, fat side up, and pour the orange juice into the dish. Brush one-third of the glaze over the ham.
  • Bake the ham for 30 minutes. Brush with half of the glaze, then continue baking and brushing with the remaining glaze for 1 1/4 hours until the ham is cooked through and has a sticky, golden surface. Let it rest for 15 minutes before carving.
