Orange Cream Cheesecake recipe

Indulge in a zesty orange cream cheesecake inspired by beloved orange slice cream biscuits. Chill for 6 hours until shiny and firm. Elevate with biscuit decoration for a stunning Christmas treat.
Ingredients:
  • 250g pkt orange slice cream biscuits
  • 60g unsalted butter, melted
  • 12.00 gm gelatine powder
  • 750g cream cheese, chopped, at room temperature
  • 165g (3/4 cup) caster sugar
  • 600ml thickened cream
  • 30.00 ml grated orange rind, plus extra, to serve
  • 40g orange jelly crystals
  • ¼ cup (60ml) boiling water
Instructions:
  • Remove the base from a 20cm springform pan, line with baking paper, leaving a 4cm overhang, then reattach the base. Lightly grease the side of the pan.
  • Crush 12 biscuits in a food processor until coarse. Add butter and process until mixed. Firmly press the mixture into the pan and chill until needed.
  • In a small microwave-safe bowl, add 2 tablespoons of water and sprinkle 3 teaspoons of gelatine over it. Let it sit for 2-3 minutes to soften. Microwave the mixture on high for 20 seconds or until hot. Stir with a fork until the gelatine is fully dissolved.
  • In a large bowl, use electric beaters to blend 500g cream cheese and 1/2 cup (110g) sugar until smooth. Incorporate 1 cup (250ml) cream, gelatine mixture, and orange rind. Beat until creamy. Pour the mixture over the biscuit base, then refrigerate for 3 hours until it sets.
  • In a small bowl, combine the jelly crystals, remaining 1 tsp gelatine, and boiling water. Use a fork to whisk until everything is dissolved. Set aside.
  • In a large bowl, blend the remaining cream cheese and sugar until smooth using electric beaters. Mix in ¾ cup (180ml) cream and the orange jelly mixture until well combined. Gently pour the jelly mixture over the cheesecake. Chill in the fridge for 3 hours until firm.
  • Before serving, whisk the remaining cream in a bowl until soft peaks form. Halve some of the remaining biscuits. Top the cake with the whipped cream, whole and halved biscuits. Finish off with a sprinkle of extra orange rind before serving.
