Russian Christmas treats from family heritage.
Ingredients:
  • 0.66670000553131 cup shortening
  • 0.75 cup white sugar
  • 1 egg
  • 0.5 cup orange juice
  • 1 teaspoon orange zest
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 2 cups confectioners' sugar
  • 2 tablespoons butter
  • 2 tablespoons orange juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease your cookie sheets.
  • Combine flour, baking powder, baking soda, and salt in a bowl. Add 1/2 cup orange juice and 1 teaspoon of orange rind to the mixture and stir until well combined.
  • Combine shortening and white sugar until creamy. Thoroughly mix in the egg. Gradually incorporate the flour mixture into the egg and sugar mixture. Drop by teaspoonful onto greased cookie sheet.
  • Bake until golden brown, about 8 to 10 minutes.
  • Prepare the icing by combining confectioner's sugar and 2 tablespoons of butter until smooth. Stir in 2 tablespoons of orange juice and 1 teaspoon of orange rind, blending well. Once the cookies have cooled, generously spread the icing on top of each one.
